I am using itunes for my podcasts. So far podcasts get loaded onto Zune fine & get deleted from the Zune after I play them according to the preferences I set.

The problem that I am having is that podcasts do not get deleted from my computer after I listen to them. Any ideas?

Are you talking about the device? If you are, that can't be changed, at least not to my knowledge.
